Description

A delicious and hearty vegetable lasagna packed with flavors and nutrients.


Ingredients

  • 9 lasagna noodles
  • 2 tablespoons olive oil
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 zucchini, sliced
  • 1 bell pepper, chopped
  • 2 cups spinach
  • 2 cups ricotta cheese
  • 1 egg
  • 3 cups marinara sauce
  • 2 cups shredded mozzarella cheese
  • 1/2 cup grated Parmesan cheese

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Cook the lasagna noodles according to package instructions.
  3. Heat olive oil in a pan and sauté the onion and garlic until fragrant.
  4. Add the zucchini, bell pepper, and spinach, and cook until tender.
  5. Mix ricotta cheese, egg, and a pinch of salt in a bowl.
  6. Spread a layer of marinara sauce in a baking dish.
  7. Layer 3 noodles, half of the ricotta mixture, half of the vegetable mixture, and one-third of the mozzarella.
  8. Repeat the layers and top with remaining noodles and sauce.
  9. Sprinkle the remaining mozzarella and Parmesan cheese on top.
  10. Bake for 30-35 minutes until bubbly.
  11. Let it cool for 10 minutes before slicing.
