Ingredients

- 9 lasagna noodles
- 2 tablespoons olive oil
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 zucchini, sliced
- 1 bell pepper, chopped
- 2 cups spinach
- 2 cups ricotta cheese
- 1 egg
- 3 cups marinara sauce
- 2 cups shredded mozzarella cheese
- 1/2 cup grated Parmesan cheese
Instructions
- Preheat the oven to 375°F (190°C).
- Cook the lasagna noodles according to package instructions.
- Heat olive oil in a pan and sauté the onion and garlic until fragrant.
- Add the zucchini, bell pepper, and spinach, and cook until tender.
- Mix ricotta cheese, egg, and a pinch of salt in a bowl.
- Spread a layer of marinara sauce in a baking dish.
- Layer 3 noodles, half of the ricotta mixture, half of the vegetable mixture, and one-third of the mozzarella.
- Repeat the layers and top with remaining noodles and sauce.
- Sprinkle the remaining mozzarella and Parmesan cheese on top.
- Bake for 30-35 minutes until bubbly.
- Let it cool for 10 minutes before slicing.
