- 200g spaghetti
- 100g pancetta, diced
- 2 large eggs
- 50g pecorino cheese, grated
- 50g parmesan cheese, grated
- Freshly ground black pepper
- Salt, to taste
Instructions
- Boil a large pot of salted water and cook the spaghetti until al dente.
- Fry the pancetta in a pan until crispy.
- Beat the eggs in a bowl and mix in the cheeses.
- Drain the spaghetti and add it to the pancetta, removing from heat.
- Stir in the egg mixture quickly to form a creamy sauce.
- Serve immediately with additional cheese and black pepper.
Notes
For a creamier texture, you can add a little pasta water when mixing the egg and cheese.
