Description

A traditional Italian dish that combines spaghetti with a creamy sauce made from eggs, cheese, pancetta, and pepper.


Ingredients

  • 200g spaghetti
  • 100g pancetta, diced
  • 2 large eggs
  • 50g pecorino cheese, grated
  • 50g parmesan cheese, grated
  • Freshly ground black pepper
  • Salt, to taste

Instructions

  1. Boil a large pot of salted water and cook the spaghetti until al dente.
  2. Fry the pancetta in a pan until crispy.
  3. Beat the eggs in a bowl and mix in the cheeses.
  4. Drain the spaghetti and add it to the pancetta, removing from heat.
  5. Stir in the egg mixture quickly to form a creamy sauce.
  6. Serve immediately with additional cheese and black pepper.

Notes

For a creamier texture, you can add a little pasta water when mixing the egg and cheese.
