Ingredients

  • 2 cups ricotta cheese
  • 1 cup grated Parmesan cheese
  • 2 cups shredded mozzarella cheese
  • 3 cups spinach, cooked
  • 2 cups mushrooms, sliced
  • 1 zucchini, sliced
  • 1 red bell pepper, diced
  • 2 cups marinara sauce
  • 1 teaspoon Italian seasoning

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Cook the lasagna noodles according to package instructions.
  3. In a bowl, mix ricotta, Parmesan, and Italian seasoning.
  4. Layer a baking dish with marinara sauce, then noodles, then the cheese mixture, followed by vegetables.
  5. Repeat layers, finishing with mozzarella on top.
  6. Bake for 30 minutes until bubbly and cheese is golden.
  7. Let sit for 10 minutes before slicing.
