Description

A quick and delicious honey mustard chicken skillet that’s perfect for busy weeknights.


Ingredients

  • 3 to 4 tablespoons olive oil
  • 1 1/2 pounds boneless skinless chicken breasts, cut into bite-sized pieces
  • 1 teaspoon kosher salt
  • 1/2 teaspoon freshly ground black pepper
  • 1/2 cup honey
  • 1/4 cup yellow mustard
  • 1/4 cup dijon mustard
  • 2 teaspoons corn starch dissolved in 2 teaspoons cold water (optional)
  • Fresh parsley for garnishing (optional)

Instructions

  1. Heat olive oil in a large skillet, then add chicken; season with salt and pepper.
  2. Sauté for about 5 to 7 minutes, until the chicken is just cooked through, stirring intermittently.
  3. Mix honey and both mustards in a small bowl until well combined; adjust flavors as desired.
  4. Pour the honey mustard mixture over the chicken and reduce heat to medium-low, stirring to coat.
  5. Let it simmer for 2 to 3 minutes.
  6. If desired, add the cornstarch slurry and stir until the sauce thickens.
  7. Garnish with parsley and serve immediately.

Notes

Store leftovers in an airtight container for 3 to 4 days. Reheat in the microwave or stovetop.
