A quick and delicious honey mustard chicken skillet that’s perfect for busy weeknights.
Ingredients

- 3 to 4 tablespoons olive oil
- 1 1/2 pounds boneless skinless chicken breasts, cut into bite-sized pieces
- 1 teaspoon kosher salt
- 1/2 teaspoon freshly ground black pepper
- 1/2 cup honey
- 1/4 cup yellow mustard
- 1/4 cup dijon mustard
- 2 teaspoons corn starch dissolved in 2 teaspoons cold water (optional)
- Fresh parsley for garnishing (optional)
Instructions
- Heat olive oil in a large skillet, then add chicken; season with salt and pepper.
- Sauté for about 5 to 7 minutes, until the chicken is just cooked through, stirring intermittently.
- Mix honey and both mustards in a small bowl until well combined; adjust flavors as desired.
- Pour the honey mustard mixture over the chicken and reduce heat to medium-low, stirring to coat.
- Let it simmer for 2 to 3 minutes.
- If desired, add the cornstarch slurry and stir until the sauce thickens.
- Garnish with parsley and serve immediately.
Notes
Store leftovers in an airtight container for 3 to 4 days. Reheat in the microwave or stovetop.
