A hearty and flavorful veggie lasagna that’s perfect for a family dinner.
Ingredients

- 9 lasagna noodles
- 2 cups ricotta cheese
- 3 cups spinach, chopped
- 1 cup mushrooms, sliced
- 2 cups marinara sauce
- 2 cups mozzarella cheese, shredded
- 1/2 cup grated Parmesan cheese
- 1 teaspoon Italian seasoning
- Salt and pepper to taste
Instructions
- Preheat the oven to 375°F (190°C).
- Cook the lasagna noodles according to package instructions until al dente.
- Mix ricotta cheese, spinach, Italian seasoning, salt, and pepper in a bowl.
- Spread a thin layer of marinara sauce on the bottom of a baking dish.
- Layer three lasagna noodles, followed by half of the ricotta mixture, a portion of mushrooms, and a layer of marinara sauce.
- Sprinkle with mozzarella cheese.
- Repeat the layering process, finishing with noodles, marinara sauce, and the remaining mozzarella and Parmesan cheeses on top.
- Bake in the preheated oven for 30 minutes until bubbly and golden.
- Let it cool for 10 minutes before slicing and serving.
Notes
Add extra vegetables like zucchini or bell peppers for more flavor.
