Description

A hearty and flavorful vegetable lasagna, perfect for a comforting dinner.


Ingredients

  • 9 lasagna noodles
  • 2 cups ricotta cheese
  • 3 cups marinara sauce
  • 2 cups spinach, fresh
  • 1 zucchini, sliced
  • 1 bell pepper, chopped
  • 1 cup mushrooms, sliced
  • 2 cups mozzarella cheese, shredded
  • 1/2 cup parmesan cheese, grated
  • 1 tablespoon olive oil

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Cook the lasagna noodles according to package instructions, then drain and set aside.
  3. Heat olive oil in a pan and sauté the zucchini, bell pepper, and mushrooms until tender.
  4. Spread a layer of marinara sauce in the bottom of a baking dish.
  5. Layer 3 lasagna noodles, followed by half of the ricotta cheese, sautéed vegetables, spinach, and mozzarella cheese.
  6. Repeat the layers, finishing with noodles and marinara sauce on top.
  7. Sprinkle the top with remaining mozzarella and parmesan cheese.
  8. Bake for 45 minutes, until bubbly and golden.
  9. Let it cool for 10 minutes before slicing.

Notes

For extra flavor, add Italian herbs to the ricotta mixture.
