Ingredients

- 9 lasagna noodles
- 2 cups ricotta cheese
- 3 cups marinara sauce
- 2 cups spinach, fresh
- 1 zucchini, sliced
- 1 bell pepper, chopped
- 1 cup mushrooms, sliced
- 2 cups mozzarella cheese, shredded
- 1/2 cup parmesan cheese, grated
- 1 tablespoon olive oil
Instructions
- Preheat the oven to 375°F (190°C).
- Cook the lasagna noodles according to package instructions, then drain and set aside.
- Heat olive oil in a pan and sauté the zucchini, bell pepper, and mushrooms until tender.
- Spread a layer of marinara sauce in the bottom of a baking dish.
- Layer 3 lasagna noodles, followed by half of the ricotta cheese, sautéed vegetables, spinach, and mozzarella cheese.
- Repeat the layers, finishing with noodles and marinara sauce on top.
- Sprinkle the top with remaining mozzarella and parmesan cheese.
- Bake for 45 minutes, until bubbly and golden.
- Let it cool for 10 minutes before slicing.
Notes
For extra flavor, add Italian herbs to the ricotta mixture.
