Description

A delicious and hearty vegetarian lasagna layered with fresh vegetables and rich cheese.


Ingredients

  • 9 lasagna noodles
  • 2 cups marinara sauce
  • 1 zucchini, sliced
  • 1 bell pepper, diced
  • 1 cup mushrooms, sliced
  • 2 cups spinach
  • 15 oz ricotta cheese
  • 2 cups mozzarella cheese, shredded
  • 1/2 cup Parmesan cheese, grated
  • 2 tablespoons olive oil
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Cook the lasagna noodles according to package instructions.
  3. Heat olive oil in a skillet over medium heat, then sauté the zucchini, bell pepper, and mushrooms until tender.
  4. Add the spinach and cook until it wilts. Season with salt and pepper.
  5. Spread a thin layer of marinara sauce at the bottom of a baking dish.
  6. Layer 3 lasagna noodles on top, followed by half of the vegetable mixture, ricotta cheese, and mozzarella cheese.
  7. Repeat the layers, ending with noodles, marinara sauce, and a generous sprinkle of Parmesan cheese on top.
  8. Bake for 30-35 minutes until the cheese is bubbly.
  9. Let it cool for 10 minutes before slicing and serving.

Notes

For added flavor, consider adding Italian herbs like basil or oregano.
