Ingredients

  • 9 lasagna noodles
  • 2 cups marinara sauce
  • 1 zucchini, sliced
  • 1 bell pepper, diced
  • 1 cup mushrooms, sliced
  • 2 cups spinach
  • 2 cups ricotta cheese
  • 2 cups mozzarella cheese, shredded
  • 1/2 cup grated Parmesan cheese
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Cook the lasagna noodles according to package instructions.
  3. Sauté the zucchini, bell pepper, and mushrooms in a pan until tender.
  4. Mix the sautéed vegetables with spinach and set aside.
  5. Spread a layer of marinara sauce on the bottom of a baking dish.
  6. Add three lasagna noodles on top of the sauce.
  7. Layer half of the ricotta cheese over the noodles.
  8. Top with half of the vegetable mixture and a third of the mozzarella.
  9. Repeat the layers with the remaining ingredients, finishing with noodles and sauce.
  10. Sprinkle with remaining mozzarella and Parmesan cheese.
  11. Bake for 45 minutes or until bubbly.
  12. Let cool for 10 minutes before slicing.
