Ingredients

  • 12 lasagna noodles
  • 2 cups ricotta cheese
  • 2 cups shredded mozzarella cheese
  • 4 cups marinara sauce
  • 1 zucchini, sliced
  • 1 bell pepper, diced
  • 1 cup mushrooms, sliced
  • 2 cups spinach
  • 1 tablespoon olive oil
  • Salt to taste
  • Pepper to taste
  • 1 teaspoon dried oregano

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Cook the lasagna noodles according to package instructions; drain and set aside.
  3. Heat olive oil in a skillet over medium heat; add zucchini, bell pepper, and mushrooms. Cook until tender.
  4. Add the spinach and cook until wilted. Season with salt, pepper, and oregano.
  5. Spread a layer of marinara sauce on the bottom of a baking dish.
