Ingredients

  • 9 lasagna noodles
  • 2 cups ricotta cheese
  • 2 cups shredded mozzarella cheese
  • 1 cup grated Parmesan cheese
  • 2 cups spinach, chopped
  • 1 zucchini, diced
  • 1 bell pepper, diced
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 2 cups marinara sauce

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Cook the lasagna noodles according to package instructions.
  3. Sauté the onion and garlic in a pan until fragrant.
  4. Add the zucchini, bell pepper, and spinach, cooking until tender.
  5. Layer the bottom of a baking dish with marinara sauce.
  6. Place three lasagna noodles on top.
  7. Add half of the ricotta mixture, followed by half of the vegetable mixture, and a third of the mozzarella.
  8. Repeat the layers, ending with marinara sauce and remaining mozzarella on top.
  9. Bake for 30-35 minutes until bubbly.
  10. Let it cool for 10 minutes before slicing.
