Ingredients

  • 9 lasagna noodles
  • 2 tablespoons olive oil
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 1 zucchini, sliced
  • 1 bell pepper, chopped
  • 1 cup spinach, chopped
  • 2 cups marinara sauce
  • 15 ounces ricotta cheese
  • 2 cups mozzarella cheese, shredded
  • 1/2 cup Parmesan cheese, grated
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Cook the lasagna noodles according to package instructions; drain and set aside.
  3. Heat olive oil in a pan over medium heat and sauté the onion and garlic until fragrant.
  4. Add the zucchini and bell pepper; cook until softened.
  5. Stir in the spinach and cook until wilted; season with salt and pepper.
  6. Spread a layer of marinara sauce on the bottom of a baking dish.
  7. Layer 3 lasagna noodles over the sauce, then spread half of the ricotta cheese, half of the vegetable mixture, and a layer of mozzarella cheese.
