Description

A delicious and hearty vegetable lasagna made with layers of pasta, ricotta cheese, and a variety of vegetables.


Ingredients

  • 9 lasagna noodles
  • 2 cups ricotta cheese
  • 2 cups shredded mozzarella cheese
  • 1 cup grated Parmesan cheese
  • 2 cups spinach
  • 1 zucchini, sliced
  • 1 bell pepper, chopped
  • 1 cup marinara sauce
  • 1 tablespoon olive oil
  • 1 teaspoon dried oregano
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Cook the lasagna noodles according to package instructions.
  3. Heat olive oil in a pan and sauté the zucchini and bell pepper until soft.
  4. Mix spinach with ricotta cheese and season with salt, pepper, and oregano.
  5. Spread a layer of marinara sauce in the bottom of a baking dish.
  6. Layer 3 lasagna noodles, half the ricotta mixture, half the sautéed veggies, and a layer of mozzarella cheese.
  7. Repeat the layers finishing with noodles, marinara sauce, and topped with remaining mozzarella and Parmesan.
  8. Bake for 30-35 minutes or until cheese is bubbly and golden brown.
  9. Let it cool for 10 minutes before slicing and serving.
