Ingredients

  • 9 lasagna noodles
  • 2 cups ricotta cheese
  • 2 cups shredded mozzarella cheese
  • 1 cup grated Parmesan cheese
  • 3 cups spinach, chopped
  • 1 zucchini, diced
  • 1 bell pepper, diced
  • 1 onion, chopped
  • 2 cups marinara sauce
  • 2 tablespoons olive oil
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Cook the lasagna noodles according to package instructions.
  3. Heat olive oil in a pan over medium heat and sauté onion, zucchini, and bell pepper until softened.
  4. Add chopped spinach and cook until wilted. Season with salt and pepper.
  5. Spread a layer of marinara sauce on the bottom of a baking dish.
  6. Layer 3 noodles, half the ricotta cheese, half the veggie mixture, a third of the mozzarella, and more sauce.
  7. Repeat the layers, finishing with noodles, sauce, and the remaining mozzarella and Parmesan on top.
  8. Bake for 30-35 minutes until golden and bubbly.
  9. Let cool for a few minutes before serving.
