  • 1/2 cup shredded Monterey Jack cheese
  • 1/2 cup milk (any kind)
  • 1/4 cup Greek yogurt or sour cream
  • 1 teaspoon Dijon mustard
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 cup breadcrumbs (optional, for topping)

Instructions

  1. Cook the quinoa: Start by combining your rinsed quinoa and vegetable broth or water in a saucepan. Bring it to a boil, then reduce the heat, cover, and let it simmer for 15 minutes.
  2. Sauté aromatics: While the quinoa cooks, heat the olive oil in a large skillet over medium heat. Add the chopped onion and sauté until it becomes soft—about 5 minutes. Then, throw in minced garlic and cook for just one more minute.
  3. Cook broccoli: Next, toss in your broccoli florets along with 1/4 cup of water. Cover the skillet to steam the broccoli for about 3-5 minutes.
  4. Make the cheese sauce: In a separate bowl, whisk together the milk, Greek yogurt (or sour cream), Dijon mustard, salt, and pepper until smooth.
  5. Combine: Stir the cooked quinoa and the broccoli mixture into the skillet.
  6. Add cheese: Remove the skillet from the heat and stir in the cheddar and Monterey Jack cheese until melted and creamy.
  7. Transfer: Move the mixture to a greased baking dish and sprinkle breadcrumbs on top if desired.
  8. Bake: Pop it into a preheated oven at 375°F (190°C) and bake for 15-20 minutes until bubbly and golden brown.
  9. Rest and serve: Let cool for about 5 minutes before serving.
