Ingredients

  • 1 pound ground beef
  • 1/2 cup finely grated zucchini
  • 1/2 cup finely grated carrot
  • 1/4 cup finely grated onion
  • 1/4 cup breadcrumbs
  • 1/4 cup grated Parmesan cheese
  • 1 large egg
  • 1 teaspoon dried oregano
  • 1/2 teaspoon garlic powder
  • Salt and black pepper to taste

Instructions

  1. Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper.
  2. Combine the ground beef, grated zucchini, grated carrot, grated onion, breadcrumbs, Parmesan cheese, egg, oregano, garlic powder, salt, and pepper in a large bowl.
  3. Gently mix all the ingredients until just combined, being careful not to overmix.
  4. Roll the mixture into 1-inch meatballs and place them on the prepared baking sheet.
  5. Bake for 18-20 minutes, until cooked through and nicely browned.
  6. Serve hot with your favorite sauce and sides.
