- 1 pound ground beef
- 1/2 cup finely grated zucchini
- 1/2 cup finely grated carrot
- 1/4 cup finely grated onion
- 1/4 cup breadcrumbs
- 1/4 cup grated Parmesan cheese
- 1 large egg
- 1 teaspoon dried oregano
- 1/2 teaspoon garlic powder
- Salt and black pepper to taste
Instructions
- Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper.
- Combine the ground beef, grated zucchini, grated carrot, grated onion, breadcrumbs, Parmesan cheese, egg, oregano, garlic powder, salt, and pepper in a large bowl.
- Gently mix all the ingredients until just combined, being careful not to overmix.
- Roll the mixture into 1-inch meatballs and place them on the prepared baking sheet.
- Bake for 18-20 minutes, until cooked through and nicely browned.
- Serve hot with your favorite sauce and sides.
Notes
Grate the veggies finely to ensure they blend in. Use lean ground beef for a healthier option. Store leftovers in an airtight container for up to 3-4 days or freeze for longer storage.
