Description

A soothing chicken soup filled with anti-inflammatory ingredients, perfect for a comforting meal.


Ingredients

  • 1 tablespoon olive oil
  • 1 onion, chopped
  • 2 carrots, sliced
  • 2 celery stalks, diced
  • 3 garlic cloves, minced
  • 1 teaspoon fresh ginger, grated
  • 8 cups chicken broth
  • 2 cups cooked chicken, shredded
  • 1 teaspoon turmeric
  • 1 teaspoon cumin
  • Salt and pepper, to taste
  • 2 cups kale or spinach
  • Juice of 1 lemon

Instructions

  1. Heat olive oil in a large pot over medium heat.
  2. Add onions, carrots, and celery; sauté until soft, about 5-7 minutes.
  3. Stir in garlic and ginger; cook for another minute until fragrant.
  4. Pour in chicken broth and bring it to a boil.
  5. Add cooked chicken, turmeric, and cumin; season with salt and pepper according to your taste.
  6. Reduce heat and let it simmer for 15 minutes so all the flavors can meld beautifully.
  7. Stir in kale (or spinach) and the juice of one lemon just before serving for that fresh burst of flavor.

Notes

Garnish with parsley or red pepper flakes for an extra kick. Suitable for freezing.
