Ingredients

  • 1 pound smoky sausage
  • 8 ounces bow tie pasta
  • 2 cups Brussels sprouts (halved)
  • 2 cups butternut squash (cubed)
  • 4 cloves garlic (minced)
  • 4 tablespoons butter
  • Salt and pepper to taste
  • Olive oil (for roasting)

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Toss the Brussels sprouts and butternut squash with olive oil, salt, and pepper. Spread evenly on a baking sheet and roast for 20-25 minutes until tender and golden.
  3. Bring water to a boil in a large pot. Cook the bow tie pasta according to package instructions until al dente. Drain and set aside.
  4. Melt the butter in a skillet over medium heat. Add the minced garlic and sauté until fragrant, about 1 minute.
  5. Add the roasted vegetables and cooked sausage to the skillet, tossing to mix.
  6. Mix in the cooked pasta, ensuring everything is well coated. Adjust seasoning as needed and serve warm!
