- 1 whole chicken
- 1 cup of rice
- 4 cups of chicken broth
- 3–4 large eggs
- Juice of 2 lemons
- Salt and pepper to taste
- Fresh parsley for garnish
Instructions
- Start by cooking the chicken: In a large pot, combine the whole chicken, chicken broth, and a sprinkle of salt. Bring the mixture to a boil. Once it bubbles, reduce the heat and let it simmer for about 30-40 minutes until the chicken is tender.
- Shred the chicken: When the chicken is ready, remove it from the pot and let it cool on a cutting board. Once it’s cool enough to handle, shred the meat off the bones and set aside. Discard the bones.
- Cook the rice: Add 1 cup of rice to the broth in the pot. Let it cook until the rice is tender, which usually takes around 20 minutes.
- Prepare the egg-lemon mixture: While the rice cooks, crack 3-4 large eggs into a bowl and whisk them together with the fresh juice of 2 lemons.
- Temper the egg mixture: Slowly add a ladle of hot broth from the pot into the egg-lemon mixture, stirring constantly to avoid scrambling the eggs.
- Combine ingredients: Gradually mix the tempered egg-lemon mixture back into the pot with the broth and rice. Stir well to ensure everything combines beautifully.
- Finish off the soup: Add the shredded chicken back into the pot and heat through. Taste your soup and adjust seasoning with additional salt and pepper if needed.
- Serve hot: Ladle the Avgolemono into bowls and garnish with fresh parsley for a pop of color. Enjoy!

Serve with crusty bread or warm pita to soak up the broth. Leftovers can be stored in the fridge for up to 3 days or frozen for 2-3 months.
