Description
A hearty and comforting vegetable lasagna packed with layers of fresh spinach, mushrooms, and ricotta cheese.
Ingredients

- 9 lasagna noodles
- 2 cups ricotta cheese
- 3 cups fresh spinach
- 1 cup sliced mushrooms
- 2 cups marinara sauce
- 2 cups shredded mozzarella cheese
- 1/2 cup grated Parmesan cheese
- 1 tablespoon olive oil
- 1 teaspoon garlic powder
- 1 teaspoon dried oregano
- Salt and pepper to taste
Instructions
- Preheat the oven to 375°F (190°C).
- Cook the lasagna noodles according to package instructions; drain and set aside.
- Heat olive oil in a pan over medium heat; add mushrooms and sauté until soft.
- Add spinach and cook until wilted; season with garlic powder, oregano, salt, and pepper.
- Spread a layer of marinara sauce on the bottom of a baking dish.
- Layer 3 lasagna noodles on top of the sauce.
- Spread half of the ricotta cheese, half of the spinach-mushroom mixture, and a third of the mozzarella cheese over the noodles.
- Repeat the layers, finishing with noodles and a topping of marinara sauce and the remaining mozzarella and Parmesan cheese.
- Bake for 35-40 minutes until cheese is bubbly and golden.
- Let it cool for 10 minutes before slicing and serving.
Notes
You can add more vegetables or different cheese varieties based on your preference. Serve with a side salad for a complete meal.
