Delicious Vegetable Lasagna

Description

A hearty and comforting vegetable lasagna packed with layers of fresh spinach, mushrooms, and ricotta cheese.


Ingredients

  • 9 lasagna noodles
  • 2 cups ricotta cheese
  • 3 cups fresh spinach
  • 1 cup sliced mushrooms
  • 2 cups marinara sauce
  • 2 cups shredded mozzarella cheese
  • 1/2 cup grated Parmesan cheese
  • 1 tablespoon olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon dried oregano
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Cook the lasagna noodles according to package instructions; drain and set aside.
  3. Heat olive oil in a pan over medium heat; add mushrooms and sauté until soft.
  4. Add spinach and cook until wilted; season with garlic powder, oregano, salt, and pepper.
  5. Spread a layer of marinara sauce on the bottom of a baking dish.
  6. Layer 3 lasagna noodles on top of the sauce.
  7. Spread half of the ricotta cheese, half of the spinach-mushroom mixture, and a third of the mozzarella cheese over the noodles.
  8. Repeat the layers, finishing with noodles and a topping of marinara sauce and the remaining mozzarella and Parmesan cheese.
  9. Bake for 35-40 minutes until cheese is bubbly and golden.
  10. Let it cool for 10 minutes before slicing and serving.

Notes

You can add more vegetables or different cheese varieties based on your preference. Serve with a side salad for a complete meal.
