- 2 chicken breasts
- 2 tablespoons balsamic vinegar
- 1 tablespoon olive oil
- 1 avocado, diced
- 1 cup cherry tomatoes, halved
- 1 cup mozzarella balls
- 1/4 cup fresh basil leaves
- Salt and pepper to taste
Instructions
- Mix the balsamic vinegar and olive oil in a bowl to create a marinade.
- Add the chicken breasts to the marinade, ensuring they’re fully coated.
- Grill or cook the chicken over medium heat until fully cooked, about 6-7 minutes per side.
- Combine the diced avocado, halved cherry tomatoes, mozzarella balls, and fresh basil in a large salad bowl.
- Slice the cooked chicken into bite-sized strips and place on top of the salad.
- Drizzle the remaining balsamic dressing, and season with salt and pepper to taste.
- Toss everything together gently and serve immediately.
Notes
Store leftovers in the refrigerator for 2-3 days, keeping the avocado separate if possible. Freeze cooked chicken for up to 3 months.
