Ingredients

  • 2 chicken breasts
  • 2 tablespoons balsamic vinegar
  • 1 tablespoon olive oil
  • 1 avocado, diced
  • 1 cup cherry tomatoes, halved
  • 1 cup mozzarella balls
  • 1/4 cup fresh basil leaves
  • Salt and pepper to taste

Instructions

  1. Mix the balsamic vinegar and olive oil in a bowl to create a marinade.
  2. Add the chicken breasts to the marinade, ensuring they’re fully coated.
  3. Grill or cook the chicken over medium heat until fully cooked, about 6-7 minutes per side.
  4. Combine the diced avocado, halved cherry tomatoes, mozzarella balls, and fresh basil in a large salad bowl.
  5. Slice the cooked chicken into bite-sized strips and place on top of the salad.
  6. Drizzle the remaining balsamic dressing, and season with salt and pepper to taste.
  7. Toss everything together gently and serve immediately.

Notes

Store leftovers in the refrigerator for 2-3 days, keeping the avocado separate if possible. Freeze cooked chicken for up to 3 months.
