- 3 medium very ripe bananas
- 1 cup granulated sugar (or half brown sugar for extra moisture)
- 1/2 cup room-temperature butter
- 2 large eggs (room temperature)
- 1 teaspoon vanilla extract
- 2 cups all-purpose flour
- 1 teaspoon baking soda
- 1/4 teaspoon salt
- Optional: 1/2 cup chopped nuts or 1/3 cup chocolate chips
- Optional: 2 tablespoons plain yogurt or sour cream
Instructions
- Preheat your oven to 350°F (175°C). Grease a 9×5-inch loaf pan or line it with parchment paper for easy removal.
- Mash those ripe bananas in a large bowl until smooth. Add the sugar, butter, eggs, and vanilla extract. Mix everything until it’s creamy and well combined.
- Combine the flour, baking soda, and salt in a separate bowl. Gradually fold these dry ingredients into the wet banana mixture. Small lumps are okay!
- Add either the chocolate chips or the nuts. Make sure not to overmix!
- Pour the batter into the greased loaf pan. Bake for 55-65 minutes, or until a toothpick inserted in the center comes out clean. Cover loosely with foil if the top browns too quickly.
- Cool in the pan for about 10-15 minutes, then transfer to a wire rack to cool completely before slicing.
Notes
Use ripe bananas for the best flavor. Don’t overmix the batter to avoid a dense loaf.
