Ingredients

  • 3 medium very ripe bananas
  • 1 cup granulated sugar (or half brown sugar for extra moisture)
  • 1/2 cup room-temperature butter
  • 2 large eggs (room temperature)
  • 1 teaspoon vanilla extract
  • 2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/4 teaspoon salt
  • Optional: 1/2 cup chopped nuts or 1/3 cup chocolate chips
  • Optional: 2 tablespoons plain yogurt or sour cream

Instructions

  1. Preheat your oven to 350°F (175°C). Grease a 9×5-inch loaf pan or line it with parchment paper for easy removal.
  2. Mash those ripe bananas in a large bowl until smooth. Add the sugar, butter, eggs, and vanilla extract. Mix everything until it’s creamy and well combined.
  3. Combine the flour, baking soda, and salt in a separate bowl. Gradually fold these dry ingredients into the wet banana mixture. Small lumps are okay!
  4. Add either the chocolate chips or the nuts. Make sure not to overmix!
  5. Pour the batter into the greased loaf pan. Bake for 55-65 minutes, or until a toothpick inserted in the center comes out clean. Cover loosely with foil if the top browns too quickly.
  6. Cool in the pan for about 10-15 minutes, then transfer to a wire rack to cool completely before slicing.

Notes

Use ripe bananas for the best flavor. Don’t overmix the batter to avoid a dense loaf.
