Ingredients

2 cups crushed vanilla wafers

1/2 cup melted butter

3 packages (8 oz each) cream cheese, softened

1 cup granulated sugar

3 large eggs

1 tsp vanilla extract

2 ripe bananas, mashed

1 package instant banana pudding mix

1 1/2 cups cold milk

Whipped cream (optional)

Extra crushed vanilla wafers for garnish


Instructions

1. Preheat oven to 325°F (163°C) and grease a 9-inch springform pan.

2. Mix crushed vanilla wafers and melted butter, press into pan, and bake for 10 minutes.

3. Beat cream cheese and sugar until smooth; add eggs one at a time and vanilla.

4. Pour filling over crust and bake for 50-60 minutes.

5. Cool to room temperature and refrigerate for at least 4 hours.

6. Prepare pudding mix with cold milk and fold in mashed bananas.

7. Spread pudding layer over chilled cheesecake.

8. Garnish with whipped cream and extra vanilla wafers.

Notes

You can substitute graham crackers for the crust.

For extra flavor, add a pinch of cinnamon to the wafer crumbs.
