Description

A quick and delicious meal that combines tender chicken with fresh veggies and a creamy, spicy sauce, served over rice.


Ingredients

  • 1 pound boneless, skinless chicken breasts
  • 2 cups cooked rice (white or brown)
  • 1 cup broccoli florets
  • 1 medium red bell pepper, sliced
  • 1 medium carrot, julienned
  • 3 medium green onions, chopped
  • ½ cup mayonnaise
  • 2 tablespoons sweet chili sauce
  • 1 tablespoon Sriracha sauce
  • 1 tablespoon soy sauce
  • to taste Salt and pepper
  • 2 tablespoons oil (for cooking)
  • Sesame seeds (for garnishing)
  • Additional green onions or cilantro (for garnish)
  • Avocado slices (optional)
  • Extra vegetables like snap peas or bell peppers (optional)

Instructions

  1. Start by prepping your ingredients. Slice the chicken breasts into bite-sized pieces; chop the veggies—bell pepper, green onions, and carrot.
  2. If you haven’t cooked your rice yet, do it now.
  3. Heat two tablespoons of oil in a large skillet over medium-high heat. Add the chicken pieces and season with salt and pepper. Sauté for about 6-8 minutes until fully cooked.
  4. Add the broccoli florets, bell pepper, and carrots to the skillet. Cook for another 3-5 minutes until the vegetables are tender.
  5. In a separate bowl, mix together the mayonnaise, sweet chili sauce, Sriracha, and soy sauce to create the sauce.
  6. Pour the sauce over the chicken and vegetables in the skillet. Toss until well coated.
  7. Serve over a bed of rice and garnish with sesame seeds, chopped green onions, and avocado slices or cilantro if desired.

Notes

This meal can be stored in the fridge for up to 3 days or frozen for up to 2-3 months. Adjust the spice level to suit your taste.
