Description

A comforting and delicious bowl of tender chicken, vibrant vegetables, and creamy, spicy Bang Bang sauce.


Ingredients

  • 1 lb chicken breast, diced
  • 2 cups cooked rice
  • 1 cup mixed vegetables (broccoli, carrots, bell peppers)
  • 1/2 cup Bang Bang sauce (mix of mayonnaise, sriracha, and honey)
  • 1 tablespoon soy sauce
  • 1 tablespoon olive oil
  • Salt and pepper to taste
  • Green onions, for garnish

Instructions

  1. Heat the olive oil in a pan over medium heat. Toss in the diced chicken and season it generously with salt and pepper. Cook until the chicken browns and is cooked through, about 5-7 minutes.
  2. Mix together the ingredients for your Bang Bang sauce in a separate bowl.
  3. Add the mixed vegetables and soy sauce to the chicken. Cook until the veggies become tender, stirring occasionally.
  4. Assemble by serving the chicken and veggie mixture over the cooked rice.
  5. Drizzle additional Bang Bang sauce over the top and garnish with chopped green onions.

Notes

For a vegetarian option, swap chicken for tofu or chickpeas. Customize the sauce to your spice preference.
