Ingredients

- 1 lb chicken breast, diced
- 2 cups cooked rice
- 1 cup mixed vegetables (broccoli, carrots, bell peppers)
- 1/2 cup Bang Bang sauce (mix of mayonnaise, sriracha, and honey)
- 1 tablespoon soy sauce
- 1 tablespoon olive oil
- Salt and pepper to taste
- Green onions, for garnish
Instructions
- Heat the olive oil in a pan over medium heat. Toss in the diced chicken and season it generously with salt and pepper. Cook until the chicken browns and is cooked through, about 5-7 minutes.
- Mix together the ingredients for your Bang Bang sauce in a separate bowl.
- Add the mixed vegetables and soy sauce to the chicken. Cook until the veggies become tender, stirring occasionally.
- Assemble by serving the chicken and veggie mixture over the cooked rice.
- Drizzle additional Bang Bang sauce over the top and garnish with chopped green onions.
Notes
For a vegetarian option, swap chicken for tofu or chickpeas. Customize the sauce to your spice preference.
