- 2 chicken breasts, diced
- 2 medium sweet potatoes, peeled and cubed
- 1 cup BBQ sauce
- 1 cup shredded cheese (cheddar or mozzarella)
- 1 tablespoon olive oil
- 1 onion, chopped
- 2 cloves garlic, minced
- Salt and pepper to taste
- Chopped green onions for garnish (optional)
Instructions
- Heat olive oil in a large skillet over medium heat. Add the chopped onion and minced garlic, and sauté until translucent.
- Add the diced chicken to the skillet and season with salt and pepper. Cook until browned and cooked through.
- Stir in the cubed sweet potatoes and BBQ sauce. Cover the skillet and cook for about 15-20 minutes, stirring occasionally, until the sweet potatoes are tender.
- Sprinkle the shredded cheese on top and cover the skillet again until melted.
- Serve hot, garnished with chopped green onions if desired.
Notes
Experiment with different types of cheese or protein for variations. Be sure to cut sweet potatoes evenly for consistent cooking.
