Ingredients

  • 2 chicken breasts, diced
  • 2 medium sweet potatoes, peeled and cubed
  • 1 cup BBQ sauce
  • 1 cup shredded cheese (cheddar or mozzarella)
  • 1 tablespoon olive oil
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • Salt and pepper to taste
  • Chopped green onions for garnish (optional)

Instructions

  1. Heat olive oil in a large skillet over medium heat. Add the chopped onion and minced garlic, and sauté until translucent.
  2. Add the diced chicken to the skillet and season with salt and pepper. Cook until browned and cooked through.
  3. Stir in the cubed sweet potatoes and BBQ sauce. Cover the skillet and cook for about 15-20 minutes, stirring occasionally, until the sweet potatoes are tender.
  4. Sprinkle the shredded cheese on top and cover the skillet again until melted.
  5. Serve hot, garnished with chopped green onions if desired.
