Description
A creamy and tangy Caesar dressing that’s easy to make and perfect for elevating salads.
Ingredients
Scale
- 1 cup Mayonnaise (or Greek yogurt for a lighter twist)
- 1/2 cup Extra Light Olive Oil (use light olive oil for best results)
- 1 tablespoon Dijon Mustard
- 3 tablespoons Fresh Lemon Juice (juice from one large lemon)
- 2 cloves Garlic (freshly grated or pressed)
- 1 cup Freshly Grated Parmesan Cheese
- 1 teaspoon Worcestershire Sauce (check for gluten if needed)
- 1 pinch Salt
- 1 teaspoon Freshly Ground Black Pepper
Instructions
- Combine the mayonnaise (or Greek yogurt) and Dijon mustard into a mixing bowl. Whisk them together until smooth.
- Add the extra light olive oil slowly while whisking continuously to emulsify the dressing.
- Introduce the fresh lemon juice into the bowl for brightness.
- Incorporate the freshly grated or pressed garlic to enhance the flavor.
- Cheese it up by stirring in the grated Parmesan cheese.
- Season with Worcestershire sauce, salt, and black pepper, and whisk until creamy.
- Taste-test and adjust seasonings if needed.
Notes
Store in an airtight container in the fridge for five to seven days. Freezing is not recommended due to the mayo/yogurt base.
