Description

A creamy and tangy Caesar dressing that’s easy to make and perfect for elevating salads.

Ingredients

Scale
  • 1 cup Mayonnaise (or Greek yogurt for a lighter twist)
  • 1/2 cup Extra Light Olive Oil (use light olive oil for best results)
  • 1 tablespoon Dijon Mustard
  • 3 tablespoons Fresh Lemon Juice (juice from one large lemon)
  • 2 cloves Garlic (freshly grated or pressed)
  • 1 cup Freshly Grated Parmesan Cheese
  • 1 teaspoon Worcestershire Sauce (check for gluten if needed)
  • 1 pinch Salt
  • 1 teaspoon Freshly Ground Black Pepper

Instructions

  1. Combine the mayonnaise (or Greek yogurt) and Dijon mustard into a mixing bowl. Whisk them together until smooth.
  2. Add the extra light olive oil slowly while whisking continuously to emulsify the dressing.
  3. Introduce the fresh lemon juice into the bowl for brightness.
  4. Incorporate the freshly grated or pressed garlic to enhance the flavor.
  5. Cheese it up by stirring in the grated Parmesan cheese.
  6. Season with Worcestershire sauce, salt, and black pepper, and whisk until creamy.
  7. Taste-test and adjust seasonings if needed.

Notes

Store in an airtight container in the fridge for five to seven days. Freezing is not recommended due to the mayo/yogurt base.
