  • 3/4 cup milk
  • 8 ounces chorizo sausage, diced
  • 2 tablespoons all-purpose flour (for gravy)
  • 2 cups milk (for gravy)
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 450°F (230°C).
  2. Whisk together the flour, baking powder, and salt in a large bowl.
  3. Cut in the butter until the mixture resembles coarse crumbs.
  4. Stir in the milk until just combined.
  5. Turn the dough out onto a floured surface and gently knead for a few seconds.
  6. Pat into a 1-inch thick round and cut into biscuits.
  7. Place on a baking sheet and bake for 10-12 minutes until golden.
  8. In a skillet over medium heat, cook the chorizo until browned.
  9. Sprinkle with 2 tablespoons of flour and stir to combine.
  10. Gradually whisk in 2 cups of milk until thickened and creamy.
  11. Season with salt and pepper.
  12. Serve the biscuits warm, topped with chorizo gravy.
