Ingredients
1 pound breakfast sausage (room temperature)
2 cups shredded sharp cheddar cheese
2 cups Bisquick baking mix
1/4 cup milk (or water)
1/4 teaspoon garlic powder (optional)
1/4 teaspoon onion powder (optional)
1/8 teaspoon cayenne pepper (optional)
Instructions
1. Preheat oven to 350°F (175°C). Line two baking sheets with parchment paper.
2. In a large bowl, combine room temperature sausage, shredded cheese, and Bisquick mix using your hands until evenly distributed.
3. Gradually add milk, mixing until the dough holds together when squeezed but isn’t overly wet.
4. Roll mixture into 1-inch balls (about 1 tablespoon each). You should get 40-45 balls.
5. Place balls on prepared baking sheets with 1-2 inches between each.
6. Bake for 20-25 minutes until golden brown, rotating pans halfway through.
7. Check internal temperature reaches 160°F using an instant-read thermometer.
8. Let rest on baking sheet for 3-5 minutes before transferring to serving platter.
9. Serve warm or at room temperature with your favorite dipping sauces.
Notes
For best results, use sausage with 20-25% fat content for optimal moisture.
These can be made ahead and frozen unbaked for up to 3 months. Bake from frozen, adding 5-7 minutes to cooking time.
Shred cheese from a block rather than using pre-shredded for better melting and texture.
Don’t overbake! Check at 18 minutes to prevent dry sausage balls.
Store leftovers in an airtight container in the refrigerator for up to 5 days.
Reheat in a 300°F oven for 10-15 minutes or air fryer at 350°F for 5-7 minutes.
