Ingredients
For crust:
1⅓ cups chocolate cookie crumbs
4 tbsp melted butter
For filling:
24 oz cream cheese (softened)
¾ cup sugar
3 large eggs
1 tsp vanilla extract
½ cup sour cream
4 oz dark chocolate, melted & cooled
For cherry layer:
1 cup pitted cherries (fresh or jarred), drained
2 tbsp cherry juice
For topping:
Whipped cream
Whole cherries
Chocolate shavings
Instructions
1. Preheat oven to 325°F (160 °C).
2. Prepare and press crust in a springform pan; chill briefly.
3. Beat cream cheese and sugar until smooth.
4. Add eggs one at a time, mixing low.
5. Stir in vanilla, sour cream, melted chocolate.
6. Fold drained cherries and a bit of juice.
7. Pour filling over crust; smooth top.
8. Bake 50–60 minutes until edges set, center jiggles slightly.
9. Cool in oven with door ajar; then chill overnight.
10. Top with whipped cream, cherries, and chocolate shavings before serving.
Notes
Don’t overmix to prevent cracks.
Use a water bath or foil shield if cracking is a concern.
Chill fully before slicing for clean cuts.
