Ingredients

  • 2 cups full-fat cottage cheese (lightly drained)
  • 3 large eggs
  • ½ cup plain Greek yogurt
  • ½ cup coconut sugar OR maple syrup
  • 2 teaspoons pure vanilla extract
  • 1 teaspoon cinnamon
  • 1 teaspoon baking powder
  • 1½ cups rolled oats or quick oats
  • 1 cup fresh blueberries (or frozen, thawed and drained)
  • ¼ cup sliced or chopped almonds (plus extra for topping)
  • 3 tablespoons melted butter (optional but recommended)
  • 2 tablespoons chia seeds
  • 1½ cups almond flour instead of oats (for a keto option)
  • ½ cup powdered allulose OR monk fruit sweetener instead of coconut sugar (for a keto option)

Instructions

  1. Preheat your oven to 350°F (175°C) and lightly grease a 9×9-inch baking dish.
  2. Prepare 2 tablespoons of sugar or monk fruit sweetener for topping.
  3. Blend the eggs and sweetener in a blender until fluffy, about 60 seconds.
  4. Add the cottage cheese, Greek yogurt, chia seeds, baking soda, vanilla extract, cinnamon, and maple syrup (or monk fruit for keto) to the blender. Blend until smooth, about 20–30 seconds.
  5. Pour the blended mixture into a mixing bowl, and stir in the oats (or almond flour for keto).
  6. Gently fold in the blueberries, ensuring if you use frozen blueberries, they are thawed and drained.
  7. Pour the batter into the prepared baking dish and spread evenly.
  8. Sprinkle the top lightly with the reserved sugar or allulose, and add slivered almonds for crunch.
  9. Bake for about 22 minutes until golden brown and set.
  10. Let it cool for at least 10 minutes before slicing.
  11. Serve warm, optionally topped with Greek yogurt.
