Ingredients

  • 1 cup fresh or frozen blueberries
  • 8 oz cream cheese, softened
  • 1 1/2 cups all-purpose flour
  • 3/4 cup granulated sugar
  • 2 large eggs
  • 1/2 cup butter, melted
  • 1/2 cup milk
  • 1 tsp vanilla extract
  • 1 tsp baking powder
  • 1/4 tsp salt
  • 2 tbsp sugar (for cream cheese filling)

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a 9×5-inch loaf pan.
  2. Beat the softened cream cheese, 2 tbsp sugar, and 1/2 tsp vanilla extract until smooth. Set aside.
  3. Whisk together melted butter and 3/4 cup sugar until combined. Add eggs and remaining 1/2 tsp vanilla extract, stirring until mixed.
  4. Pour in the milk and stir again.
  5. Mix flour, baking powder, and salt in a separate bowl. Gradually fold into wet mixture until no dry flour remains.
  6. Fold in the blueberries gently.
  7. Pour half the batter into the prepared loaf pan. Spoon half the cream cheese mixture over the top and swirl lightly with a knife. Repeat with remaining batter and cream cheese mixture.
  8. Bake for about 60 minutes. Check for doneness with a toothpick.
  9. Cool the bread in the pan for 10 minutes, then transfer to a wire rack to cool completely.

Notes

Serve warm, cold, or at room temperature. Pair with coffee or ice cream.
