- 6 eggs
- 1 cup chopped vegetables (spinach, bell peppers, onions, etc.)
- 1 cup shredded cheese (cheddar or your choice)
- 1/2 cup cooked bacon or sausage (optional)
- Salt and pepper to taste
- Cooking spray or muffin liners
Instructions
- Preheat the oven to 350°F (175°C) and grease a muffin tin with cooking spray or use muffin liners.
- Whisk together the eggs and season with salt and pepper in a large bowl.
- Stir in the chopped vegetables, cheese, and cooked bacon or sausage if using.
- Pour the egg mixture evenly into each muffin cup, filling about 2/3 full.
- Bake for 20-25 minutes, or until the egg muffins are set and lightly golden on top.
- Allow to cool before removing from the muffin tin. Enjoy warm or let cool and store for meal prep!
Notes
