- 2 tbsp apple cider vinegar
- 2 tbsp honey or maple syrup
- ½ tsp Dijon mustard
- Pinch of salt and black pepper
Instructions
- Prep the vegetables and fruit by washing and chopping the broccoli into small, bite-sized florets. Next, dice the apples, leaving the skin on for added color or peeling if preferred.
- Mix the salad in a large mixing bowl, combining the chopped broccoli, diced apples, shredded carrots, dried cranberries, sunflower seeds (or pecans), finely diced red onion, and shredded cheddar cheese. Mix gently until well-distributed.
- Make the dressing by whisking together Greek yogurt (or your chosen base), apple cider vinegar, honey (or maple syrup), Dijon mustard, and a pinch of salt and pepper until smooth and creamy.
- Combine the dressing with the salad mixture. Toss well to ensure every ingredient is coated.
- Chill the salad for about 30 minutes if desired, or serve immediately for that delightful crunch.
