Description
Ultra-creamy no-bake chocolate dip with authentic brownie batter flavor. Made with cream cheese, cocoa powder, and heat-treated flour for safe raw consumption. Ready in 5 minutes and serves 12-15 people. Perfect for parties, snacking, or last-minute entertaining.
Ingredients
8 oz cream cheese (one package), softened to room temperature
1/2 cup (1 stick) unsalted butter, softened to room temperature
1 1/2 cups powdered sugar, sifted
3/4 cup unsweetened cocoa powder (Dutch-process or natural), sifted
1/4 cup all-purpose flour, heat-treated
2 teaspoons pure vanilla extract
1/4 teaspoon salt
2–4 tablespoons milk or heavy cream
1/2 cup mini chocolate chips (optional)

Instructions
1. Heat-treat flour by spreading on baking sheet and baking at 350°F for 5 minutes. Let cool completely.
2. Remove cream cheese and butter from refrigerator 1-2 hours before making, or microwave each for 10-15 seconds until soft but not melted.
3. Sift powdered sugar and cocoa powder together into a bowl to remove all lumps.
4. In large mixing bowl using electric mixer on medium speed, beat softened cream cheese and butter together for 2-3 minutes until light and fluffy.
5. Add vanilla extract and salt, beating until incorporated.
6. With mixer on low speed, gradually add sifted powdered sugar and cocoa powder in three additions, scraping down sides of bowl between additions.
7. Mix in cooled heat-treated flour on low speed just until combined.
8. Add milk or cream 1 tablespoon at a time, beating until dip reaches desired consistency. Dip should be thick but easily spreadable.
9. Using rubber spatula, gently fold in mini chocolate chips or other mix-ins if using.
10. Taste and adjust, adding more powdered sugar for sweetness or cocoa powder for chocolate intensity.
11. Transfer to serving bowl and smooth top with offset spatula. Can serve immediately or refrigerate.
12. For best flavor, refrigerate for at least 30 minutes before serving. Let sit at room temperature for 15-20 minutes before serving to achieve perfect dippable consistency.
Notes
Cream cheese and butter MUST be softened to room temperature to prevent lumpy, grainy texture.
Always sift cocoa powder and powdered sugar to remove lumps before mixing.
Heat-treating flour at 350°F for 5 minutes makes it safe to eat raw by killing potential bacteria.
This dip is completely safe to eat raw as it contains no eggs and uses heat-treated flour.
Dip tastes even better after chilling 4-24 hours as flavors meld and intensify.
Store in airtight container in refrigerator for up to 5 days or freeze for up to 2 months.
If dip becomes too stiff after refrigeration, stir in 1-2 tablespoons milk to loosen.
