  • 1 cup buttermilk (warmed to 90°F)
  • 1 pack instant active yeast (0.25 oz or 2 ¼ tsp)
  • ½ cup salted butter (very soft or somewhat melted)
  • ⅓ cup white sugar
  • ½ tsp salt
  • 2 large eggs
  • 4 cups all-purpose flour (more as needed)
  • ¼ cup heavy cream (for brushing the tops, or whole milk)
  • ½ cup salted butter (very soft, for filling)
  • 1 ¼ cup brown sugar (for filling)
  • 2 Tbsp cinnamon (for filling)
  • 5 Tbsp salted butter (softened, for icing)
  • 4 oz cream cheese (for icing)
  • 1 tsp vanilla extract (for icing)
  • 1 ½2 cups powdered sugar (for icing)

Instructions

  1. Warm your buttermilk in the microwave or on the stovetop until it reaches around 90°F.
  2. Combine the warm buttermilk and instant active yeast in a large bowl and let it sit for about 5 minutes until frothy.
  3. Add softened butter, white sugar, salt, and eggs to the yeast mixture and whisk together until smooth.
  4. Gradually add flour, mixing with a spatula or wooden spoon until the dough comes together; if sticky, add more flour a tablespoon at a time.
  5. Knead the dough on a floured surface for about 5-7 minutes until smooth and elastic.
  6. Place the kneaded dough in a greased bowl, cover with a kitchen towel, and let it rise in a warm place until it doubles in size (about 1 hour).
  7. Punch down the risen dough gently to release air, then roll it out on a floured surface into a rectangle about 1/4 inch thick.
  8. Spread the softened butter evenly over the dough.
  9. Mix together brown sugar and cinnamon in a bowl, then sprinkle this mixture over the buttered dough.
  10. Roll the dough from one edge into a tight log.
  11. Slice the rolled dough into 12 equal pieces and place in a greased baking pan.
  12. Cover with a towel and let rise for another 30 minutes.
  13. Preheat your oven to 375°F (190°C).
  14. Brush the tops with heavy cream before baking.
  15. Bake for 15-20 minutes, until golden brown.
  16. Beat together softened butter and cream cheese in a medium bowl until creamy, then mix in vanilla extract and powdered sugar until desired consistency.
  17. Serve warm drizzled with cream cheese icing.

Notes

For extra flavor, consider adding nuts or dried fruit to the filling. Store leftovers in an airtight container in the fridge for up to 3 days or freeze for up to 2 months.
