Ingredients

  • 9 lasagna noodles
  • 2 cups ricotta cheese
  • 3 cups shredded mozzarella cheese
  • 1 cup grated Parmesan cheese
  • 4 cups spinach
  • 2 cups sliced mushrooms
  • 1 zucchini, sliced
  • 1 red bell pepper, chopped
  • 4 cups marinara sauce
  • 2 tablespoons olive oil
  • 1 teaspoon dried oregano
  • 1 teaspoon garlic powder
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Cook the lasagna noodles according to package instructions; drain and set aside.
  3. Heat olive oil in a pan and sauté the mushrooms, zucchini, and bell pepper until tender; add spinach and cook until wilted.
  4. Add oregano, garlic powder, salt, and pepper to the vegetable mixture.
  5. Spread a layer of marinara sauce at the bottom of a baking dish.
