Description

A creamy and tangy Caesar Salad Dressing that elevates any salad with robust flavors.

Ingredients

Scale
  • 2 cloves garlic (minced)
  • 1/2 teaspoon anchovy paste (optional)
  • 1/2 teaspoon pepper (freshly cracked)
  • 2 teaspoons capers (brined)
  • 2 tablespoons lemon juice (from one lemon)
  • 2 teaspoons dijon mustard
  • 1/2 cup mayonnaise
  • 1/2 cup Parmesan cheese (grated)
  • 1/2 cup olive oil (extra virgin, good quality)
  • 1/4 teaspoon salt (or to taste)

Instructions

  1. Start by mincing the garlic finely.
  2. In a mixing bowl, combine the minced garlic, anchovy paste (if using), freshly cracked pepper, brined capers, and freshly squeezed lemon juice.
  3. Add the Dijon mustard to the bowl and whisk everything together until it’s well mixed.
  4. Next, incorporate the mayonnaise into the garlic mixture.
  5. Gradually pour in the olive oil while continuously whisking to combine.
  6. Finally, mix in the grated Parmesan cheese.
  7. Taste your dressing. If it needs a bit more flavor, sprinkle in the salt and adjust the seasoning.
  8. And that’s it! You made your own Caesar Salad Dressing!
