A creamy and zesty Cajun Chicken Alfredo Orzo that’s perfect for weeknight dinners.

- 1 lb boneless skinless chicken breasts (diced)
- 1 tbsp Cajun seasoning (adjust to taste)
- 1 tbsp olive oil (for sautéing)
- 1 cup diced onions (fresh is best)
- 2 cloves garlic (minced)
- 1 cup bell pepper (diced, optional)
- 1.5 cups orzo pasta
- 4 cups chicken broth
- 1 cup heavy cream
- 1 cup Parmesan cheese (grated)
- Salt (to taste)
- Pepper (to taste)
- Fresh parsley (for garnish, optional)
Instructions
- Warm 1 tablespoon of olive oil in a large pot over medium heat until shimmering.
- Add in your diced chicken, and season it with 1 tablespoon of Cajun seasoning, some salt, and pepper. Cook the chicken for about 5-7 minutes until it turns golden brown and is cooked through.
- Once the chicken is cooked, remove it from the pot and set it aside.
- Add in 1 cup of diced onions and 2 cloves of minced garlic into the same pot. Sauté them for about 2-3 minutes until they smell amazing.
- If you enjoy bell peppers, stir in 1 cup of diced bell pepper at this stage and let it cook for a minute.
- Pour in 1.5 cups of orzo pasta, followed by 4 cups of chicken broth and 1 cup of heavy cream. Bring this mixture to a gentle boil, and then lower the heat.
- Cover the pot and let everything simmer for about 10-12 minutes, stirring occasionally until the orzo becomes tender.
- Finally, return the cooked chicken to the pot, and stir in 1 cup of grated Parmesan cheese until your mixture is creamy and well combined. Adjust the seasoning if needed!
- Ladle the warm orzo mixture into bowls and finish it off with fresh parsley for that extra touch of flavor.
Notes
Consider serving with side salad or crusty bread. Store leftovers in an airtight container in the fridge for up to 3 days.
