- 2 boneless, skinless chicken breasts
- 1 cup buttermilk
- 1 tablespoon Cajun seasoning
- 1 cup all-purpose flour
- 1 teaspoon paprika
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1/2 teaspoon salt
- 1/2 teaspoon black pepper
- Vegetable oil for frying
- 1/2 cup mayonnaise
- 2 cloves garlic, minced
- 1 tablespoon lemon juice
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 4 brioche buns
- Leafy romaine lettuce
- Sliced tomatoes
Instructions
- Start by making the marinade. In a bowl, combine the buttermilk and Cajun seasoning. Add the chicken breasts, making sure they’re fully submerged. Cover the bowl and marinate in the refrigerator for at least 1 hour.
- While the chicken marinates, mix the dry ingredients in a separate bowl. Combine the flour, paprika, garlic powder, onion powder, salt, and black pepper to make a flavorful coating.
- Heat vegetable oil in a deep skillet over medium-high heat. Aim for a temperature of about 350°F.
- Once marinated, remove the chicken from the buttermilk, allowing the excess to drip off. Dredge each chicken breast in the flour mixture until evenly coated.
- Carefully place the chicken in the hot oil. Fry for about 5-7 minutes on each side, or until golden brown and fully cooked (the internal temperature should reach 165°F).
- While the chicken fries, prepare the garlic aioli. In a small bowl, mix together the mayonnaise, minced garlic, lemon juice, salt, and black pepper.
- Once cooked, drain the chicken on paper towels and let it rest for a few minutes.
- Now it’s time to assemble! Spread a generous amount of garlic aioli on the bottom half of each brioche bun. Add a layer of leafy romaine lettuce, top it with a slice of tomato, and finish with the crispy chicken. Cap it off with the other half of the bun, and voilà!
Notes
Serve with extra garlic aioli for dipping and your choice of sides like French fries or a fresh salad.
