- 1 lb Andouille sausage
- 4 medium Potatoes, diced
- 1 Onion, chopped
- 1 Bell pepper, chopped
- 2 stalks Celery, chopped
- 2 tbsp Cajun spices
- 1 cup Heavy cream
- 1 cup Cheddar cheese, shredded
- 4 cups Chicken broth
- Salt, to taste
- Pepper, to taste
Instructions
- Heat a large pot over medium heat and cook the andouille sausage until browned, about 5-7 minutes.
- Add the diced potatoes and chopped onion, bell pepper, and celery to the pot; cook for an additional 3-4 minutes.
- Sprinkle in Cajun spices and stir well to coat the ingredients.
- Pour in chicken broth and bring the mixture to a boil.
- Lower the heat and let it simmer for 15-20 minutes, or until potatoes are tender.
- Stir in the heavy cream and cheddar cheese until melted and well combined.
- Season with salt and pepper to taste, then serve hot.
Notes
For additional flavors, consider adding a bay leaf while simmering and remove before serving. Use fresh ingredients for the best taste.
