Description

Ingredients

  • 1 lb Andouille sausage
  • 4 medium Potatoes, diced
  • 1 Onion, chopped
  • 1 Bell pepper, chopped
  • 2 stalks Celery, chopped
  • 2 tbsp Cajun spices
  • 1 cup Heavy cream
  • 1 cup Cheddar cheese, shredded
  • 4 cups Chicken broth
  • Salt, to taste
  • Pepper, to taste

Instructions

  1. Heat a large pot over medium heat and cook the andouille sausage until browned, about 5-7 minutes.
  2. Add the diced potatoes and chopped onion, bell pepper, and celery to the pot; cook for an additional 3-4 minutes.
  3. Sprinkle in Cajun spices and stir well to coat the ingredients.
  4. Pour in chicken broth and bring the mixture to a boil.
  5. Lower the heat and let it simmer for 15-20 minutes, or until potatoes are tender.
  6. Stir in the heavy cream and cheddar cheese until melted and well combined.
  7. Season with salt and pepper to taste, then serve hot.

Notes

For additional flavors, consider adding a bay leaf while simmering and remove before serving. Use fresh ingredients for the best taste.
