Bite-sized versions of traditional cannoli filled with a creamy ricotta and mascarpone mixture, perfect for any celebration.

- 1 premade pie crust
- 1/2 cup whole milk Ricotta Cheese (strained)
- 1/4 cup mascarpone cheese
- 1/2 tsp. vanilla extract
- 1/3 cup powdered sugar
- 1/3 cup mini chocolate chips; plus more for topping
Instructions
- Preheat your oven to 400 degrees F.
- Unroll the room temperature pie crust onto a lightly floured surface.
- Cut out 12 rounds from the pie crust using a 2 ½ inch round cutter.
- Place the rounds into an ungreased mini muffin tin and press the dough into the pan.
- Bake for about 10-12 minutes or until golden brown.
- Let them cool for about 15 minutes.
- Mix together the strained ricotta, mascarpone, powdered sugar, vanilla, and mini chocolate chips in a medium bowl.
- Spoon the ricotta filling into the cooled pie cups.
- Pipe the filling into the cups for an elegant look.
- Sprinkle with extra mini chocolate chips and dust with powdered sugar. Enjoy!

Strain the ricotta well and use room temperature ingredients for the best texture.
