Description

Bite-sized versions of traditional cannoli filled with a creamy ricotta and mascarpone mixture, perfect for any celebration.


Ingredients

  • 1 premade pie crust
  • 1/2 cup whole milk Ricotta Cheese (strained)
  • 1/4 cup mascarpone cheese
  • 1/2 tsp. vanilla extract
  • 1/3 cup powdered sugar
  • 1/3 cup mini chocolate chips; plus more for topping

Instructions

  1. Preheat your oven to 400 degrees F.
  2. Unroll the room temperature pie crust onto a lightly floured surface.
  3. Cut out 12 rounds from the pie crust using a 2 ½ inch round cutter.
  4. Place the rounds into an ungreased mini muffin tin and press the dough into the pan.
  5. Bake for about 10-12 minutes or until golden brown.
  6. Let them cool for about 15 minutes.
  7. Mix together the strained ricotta, mascarpone, powdered sugar, vanilla, and mini chocolate chips in a medium bowl.
  8. Spoon the ricotta filling into the cooled pie cups.
  9. Pipe the filling into the cups for an elegant look.
  10. Sprinkle with extra mini chocolate chips and dust with powdered sugar. Enjoy!

Notes

Strain the ricotta well and use room temperature ingredients for the best texture.
