Fresh and elegant Caprese Bites with juicy cherry tomatoes, creamy mozzarella, and fragrant basil drizzled with balsamic glaze. Ready in 10 minutes – no cooking required!
Ingredients
1 pint cherry or grape tomatoes (about 20–24 tomatoes)
8 ounces fresh mozzarella ciliegine (about 20–24 balls), drained
20–24 fresh basil leaves, medium-sized
1/4 cup extra virgin olive oil (good quality)
2 tablespoons balsamic glaze (or balsamic reduction)
Flaky sea salt (like Maldon)
Freshly ground black pepper
20–24 small wooden skewers or decorative toothpicks
OPTIONAL GARNISH:
Fresh thyme leaves
Edible flowers
Instructions
1. Drain mozzarella balls in a colander for 10 minutes, then transfer to paper towels and pat completely dry.
2. Wash cherry tomatoes and basil leaves. Dry everything thoroughly with paper towels or a clean kitchen towel.
3. If mozzarella balls are significantly larger than tomatoes, cut them in half for better proportion.
4. Sort through basil leaves and select medium-sized ones that are vibrant green with no brown spots. Set aside.
5. Take a wooden skewer or toothpick. Thread one cherry tomato onto it first, going through the side (not top to bottom).
6. Fold a basil leaf in half or thirds (depending on size) and thread onto the skewer after the tomato.
7. Add one mozzarella ball last. Press all components together snugly but not too tight.
8. Repeat with remaining ingredients until all bites are assembled.
9. Arrange assembled bites on a serving platter, either standing upright or laying flat.
10. Right before serving, drizzle the bites with extra virgin olive oil in a light stream.
11. Drizzle balsamic glaze over top in a decorative zigzag pattern.
12. Sprinkle with flaky sea salt and freshly ground black pepper to taste.
13. Optional: Add a tiny sprinkle of fresh thyme leaves or edible flowers for extra elegance.
14. Serve immediately at room temperature for best flavor and texture.
Notes
All ingredients must be thoroughly dried before assembly to prevent watery presentation.
Don’t add olive oil, balsamic glaze, salt, or pepper until right before serving to prevent sogginess.
Can assemble up to 4 hours ahead – cover loosely and refrigerate, but don’t add dressings until serving.
Use the ripest, most flavorful tomatoes you can find – peak season is July-September.
Fresh mozzarella in water is essential – don’t use pre-shredded cheese.
Room temperature ingredients have the best flavor – remove from refrigerator 15-20 minutes before serving.
Handle basil leaves gently to prevent bruising and darkening.
For grilled version: grill tomatoes for 1-2 minutes before assembling for smoky flavor.
Store components separately if making ahead: tomatoes (2-3 days room temp), mozzarella (5-7 days refrigerated), basil (2 days).
Scale easily: use 1 tomato, 1 mozzarella ball, and 1 basil leaf per skewer.
These don’t freeze well due to high water content in fresh ingredients.
