Ingredients

Scale

MOCKTAIL BASE:

½ cup strong brewed coffee, cooled completely (or ¼ cup cold brew concentrate)

½ cup whole milk or half-and-half

½ cup heavy cream

3 tablespoons caramel sauce (plus extra for drizzling)

2 tablespoons chocolate syrup

1 cup vanilla ice cream (about 2 large scoops)

1 cup ice cubes

Pinch of sea salt

½ teaspoon vanilla extract

GARNISH:

Whipped cream (generous dollop)

Extra caramel sauce for drizzling

Chocolate shavings or mini chocolate chips

Flaky sea salt (tiny pinch)

Cocoa powder for dusting (optional)

OPTIONAL RIM:

Caramel sauce

Crushed graham crackers or chocolate cookie crumbs

Instructions

1. Brew coffee and cool completely in refrigerator (at least 1 hour ahead). Warm coffee will create watery consistency.

2. Chill a tall glass (12-16 oz) in freezer for at least 15 minutes.

3. Optional: Create a decorative rim by dipping glass rim in caramel sauce, then into crushed graham crackers or chocolate cookie crumbs.

4. Remove glass from freezer. Drizzle 1-2 tablespoons caramel sauce inside the glass in a spiral or zigzag pattern, rotating as you go.

5. Add ingredients to blender in this order: cooled coffee, milk, heavy cream, vanilla extract, 3 tablespoons caramel sauce, chocolate syrup, pinch of sea salt, ice cream, and ice cubes on top.

6. Blend on high speed for 30-45 seconds until completely smooth and thick like a milkshake. Mixture should flow slowly and coat glass beautifully.

7. Taste and adjust: Add more caramel for sweetness, instant espresso powder for stronger coffee flavor, or chocolate syrup for more chocolate.

8. Pour slowly into prepared glass, allowing mixture to slide along caramel drizzles. Fill three-quarters full.

9. Top with generous dollop of whipped cream, piling it high.

10. Drizzle more caramel sauce over whipped cream in crosshatch pattern. Sprinkle with chocolate shavings or mini chips.

11. Finish with tiny pinch of flaky sea salt on top for sparkle and flavor contrast.

12. Serve immediately with wide straw and/or spoon. Enjoy this decadent dessert drink!

Notes

Coffee MUST be completely cooled or it will melt ice cream and create watery consistency.

For thicker mocktail, add extra scoop of ice cream or use frozen banana.

For thinner consistency, add 1-2 tablespoons milk and blend briefly.

Cold brew concentrate creates smoother flavor than regular brewed coffee.

Dairy-free: Use coconut cream, oat milk, and non-dairy ice cream for equally delicious results.

Sugar-free: Use sugar-free caramel syrup, chocolate syrup, and sugar-free ice cream.

Kid-friendly: Use decaf coffee or replace with chocolate milk for zero caffeine.

Make-ahead: Brew coffee and prepare garnishes hours ahead, but blend just before serving.

This mocktail is thick – you may want both a straw and spoon.

Store leftover blended mocktail in freezer, then re-blend before serving.
