- 2 cups rice
- 1 lb chicken thighs or breasts
- 1 can coconut milk
- 1 cup chicken broth
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 bell pepper, chopped
- 1 teaspoon thyme
- 1 teaspoon paprika
- Salt and pepper to taste
- Green onions for garnish
Instructions
- Heat some oil in a large pot over medium heat, add the onion, garlic, and bell pepper, and sauté until softened.
- Add the chicken and cook until browned.
- Stir in the rice, coconut milk, chicken broth, thyme, paprika, salt, and pepper.
- Bring to a boil, then reduce heat to low, cover, and simmer for about 20-25 minutes, or until the rice is cooked and the chicken is tender.
- Fluff the rice with a fork, garnish with green onions, and serve.
Notes
For the best flavor, choose chicken thighs, rinse your rice, and don’t skip the garnish of green onions.
