Ingredients

  • 2 cups rice
  • 1 lb chicken thighs or breasts
  • 1 can coconut milk
  • 1 cup chicken broth
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 bell pepper, chopped
  • 1 teaspoon thyme
  • 1 teaspoon paprika
  • Salt and pepper to taste
  • Green onions for garnish

Instructions

  1. Heat some oil in a large pot over medium heat, add the onion, garlic, and bell pepper, and sauté until softened.
  2. Add the chicken and cook until browned.
  3. Stir in the rice, coconut milk, chicken broth, thyme, paprika, salt, and pepper.
  4. Bring to a boil, then reduce heat to low, cover, and simmer for about 20-25 minutes, or until the rice is cooked and the chicken is tender.
  5. Fluff the rice with a fork, garnish with green onions, and serve.

Notes

For the best flavor, choose chicken thighs, rinse your rice, and don’t skip the garnish of green onions.
