Ingredients

  • 2 cups grated carrots
  • 1 cup all-purpose flour
  • 1 cup sugar
  • 1/2 cup brown sugar
  • 1/2 cup vegetable oil
  • 3 large eggs
  • 1 teaspoon cinnamon
  • 1 teaspoon baking soda
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
  • 8 oz cream cheese
  • 1/4 cup sugar (for cheesecake layer)
  • 1 egg (for cheesecake layer)
  • 1 teaspoon vanilla extract (for cheesecake layer)

Instructions

  1. Preheat your oven to 350°F (175°C). Grease and line a baking pan with parchment paper for easy removal.
  2. Mix together the grated carrots, sugar, brown sugar, and vegetable oil until everything is well incorporated.
  3. Crack in the eggs and give it a good mix until smooth and velvety.
  4. Combine the flour, cinnamon, baking soda, baking powder, and salt in another bowl. Gradually add these dry ingredients into the wet mixture, stirring until just combined.
  5. Beat together the cream cheese, sugar, egg, and vanilla extract in a separate bowl until smooth and creamy for the cheesecake swirl.
  6. Pour half of the carrot mixture into your prepared baking pan, spreading it evenly.
  7. Drop spoonfuls of the cheesecake mixture over the carrot batter and swirl with a knife for a beautiful marbled effect.
  8. Add the remaining carrot batter on top of the cheesecake layer, covering it completely.
  9. Bake in your preheated oven for about 30-35 minutes or until a toothpick inserted in the center comes out clean.
  10. Let the bars cool completely in the pan before slicing them into delicious squares.
