- 2 cups grated carrots
- 1 cup all-purpose flour
- 1 cup sugar
- 1/2 cup brown sugar

- 8 oz cream cheese

Instructions
- Preheat your oven to 350°F (175°C). Grease and line a baking pan with parchment paper for easy removal.
- Mix together the grated carrots, sugar, brown sugar, and vegetable oil until everything is well incorporated.
- Crack in the eggs and give it a good mix until smooth and velvety.
- Combine the flour, cinnamon, baking soda, baking powder, and salt in another bowl. Gradually add these dry ingredients into the wet mixture, stirring until just combined.
- Beat together the cream cheese, sugar, egg, and vanilla extract in a separate bowl until smooth and creamy for the cheesecake swirl.
- Pour half of the carrot mixture into your prepared baking pan, spreading it evenly.
- Drop spoonfuls of the cheesecake mixture over the carrot batter and swirl with a knife for a beautiful marbled effect.
- Add the remaining carrot batter on top of the cheesecake layer, covering it completely.
- Bake in your preheated oven for about 30-35 minutes or until a toothpick inserted in the center comes out clean.
