Delicious chai cookies infused with warm spices like cinnamon and cardamom, perfect for a cozy snack.
Ingredients

- ¾ cup + 1 and ½ Tablespoons (102g) all-purpose flour
- ½ teaspoon baking soda
- 1 teaspoon ground cinnamon
- 1 teaspoon ground cardamom
- ¼ teaspoon ground ginger
- ¼ teaspoon salt
- 6 Tablespoons (85g) unsalted butter, softened to room temperature
- ½ cup (100g) firmly packed light brown sugar
- 2 Tablespoons (25g) granulated sugar
- 1 large egg, room temperature
- 2 teaspoons vanilla extract
- 2 Tablespoons (30mL) unsulphured molasses
- 1 and ½ cups (120g) old fashioned oats (do not use quick oats)
- ⅓ cup (57g) white chocolate chips
Instructions
- Preheat your oven to 350ºF (177ºC).
- Line a large baking sheet with parchment paper or a silicone baking mat and set it aside.
- Whisk together the flour, baking soda, cinnamon, cardamom, ginger, and salt in a medium bowl. Set this aside for later use.
- Cream together the softened butter and both sugars in a large bowl using a handheld mixer or stand mixer with the paddle attachment until light and fluffy, about 2-3 minutes.
- Add the egg and beat on high until fully combined.
- Incorporate the vanilla and molasses, and beat on high once more, scraping the sides and bottom of the bowl as needed.
- Lower the mixer speed to low, and slowly add the dry ingredients into the wet mixture, mixing until just combined.
- Add the old-fashioned oats and white chocolate chips.
- Drop scoops of dough onto the prepared baking sheet using a cookie scoop.
- Bake for 10-12 minutes or until the edges are just set. Let them rest on the baking sheet for at least 10 minutes.
Notes
Store cookies in an airtight container at room temperature for up to 5 days. Baked cookies freeze well, and you can freeze unbaked dough for up to 2 months.
