- 2 chicken breasts
- 2 ripe avocados, diced
- 5 cups mixed salad greens
- 1 cup cherry tomatoes, halved
- 1/4 red onion, thinly sliced
- 1/4 cup cilantro, chopped
- 2 tablespoons olive oil
- 1 tablespoon lime juice
- Salt and pepper to taste
Instructions
- Preheat your grill or grill pan over medium-high heat.
- Season the chicken breasts with salt, pepper, and a drizzle of olive oil. Grill for 6-7 minutes per side until the chicken is fully cooked and has beautiful grill marks.
- Remove the chicken from the grill and let it rest for a few minutes before slicing it into strips.
- Combine the salad greens, cherry tomatoes, red onion, diced avocado, and chopped cilantro in a large bowl. Toss gently to mix.
- Whisk together the olive oil, lime juice, salt, and pepper in a small bowl. Pour this dressing over the salad mixture and toss gently to coat everything evenly.
- Top the salad with your sliced grilled chicken and serve immediately. Enjoy!
