Ingredients

  • 2 chicken breasts
  • 2 ripe avocados, diced
  • 5 cups mixed salad greens
  • 1 cup cherry tomatoes, halved
  • 1/4 red onion, thinly sliced
  • 1/4 cup cilantro, chopped
  • 2 tablespoons olive oil
  • 1 tablespoon lime juice
  • Salt and pepper to taste

Instructions

  1. Preheat your grill or grill pan over medium-high heat.
  2. Season the chicken breasts with salt, pepper, and a drizzle of olive oil. Grill for 6-7 minutes per side until the chicken is fully cooked and has beautiful grill marks.
  3. Remove the chicken from the grill and let it rest for a few minutes before slicing it into strips.
  4. Combine the salad greens, cherry tomatoes, red onion, diced avocado, and chopped cilantro in a large bowl. Toss gently to mix.
  5. Whisk together the olive oil, lime juice, salt, and pepper in a small bowl. Pour this dressing over the salad mixture and toss gently to coat everything evenly.
  6. Top the salad with your sliced grilled chicken and serve immediately. Enjoy!

Notes

Store any uneaten salad in an airtight container in the fridge for up to 3 days, adding avocados fresh to prevent browning.
