Description

Delicious Cheese Chicken Enchiladas made with tender chicken, creamy queso cheese, and enchilada sauce, perfect for family gatherings.


Ingredients

  • 2 cups cooked chicken, shredded
  • 1 cup queso cheese, shredded
  • 1 cup enchilada sauce
  • 8 flour tortillas
  • 1/2 cup sour cream
  • 1/2 cup diced onions
  • 1/2 cup chopped cilantro
  • 1 teaspoon cumin
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Mix together the shredded chicken, 1/2 cup of queso cheese, cumin, and a sprinkle of salt and pepper.
  3. Pour enchilada sauce on the bottom of a baking dish.
  4. Fill each flour tortilla with the chicken mixture, roll it up tightly, and place it seam side down in the baking dish.
  5. Pour the remaining enchilada sauce over the top and sprinkle the remaining queso cheese.
  6. Bake for 20-25 minutes or until the cheese is melted and bubbly.
  7. Serve hot, topped with sour cream, diced onions, and fresh cilantro.

Notes

Use rotisserie chicken for a quicker meal and ensure you use freshly shredded cheese for better meltability.
