- 2 cups cooked chicken, shredded
- 1 cup queso cheese, shredded
- 1 cup enchilada sauce
- 8 flour tortillas
- 1/2 cup sour cream
- 1/2 cup diced onions
- 1/2 cup chopped cilantro
- 1 teaspoon cumin
- Salt and pepper to taste
Instructions
- Preheat your oven to 375°F (190°C).
- Mix together the shredded chicken, 1/2 cup of queso cheese, cumin, and a sprinkle of salt and pepper.
- Pour enchilada sauce on the bottom of a baking dish.
- Fill each flour tortilla with the chicken mixture, roll it up tightly, and place it seam side down in the baking dish.
- Pour the remaining enchilada sauce over the top and sprinkle the remaining queso cheese.
- Bake for 20-25 minutes or until the cheese is melted and bubbly.
- Serve hot, topped with sour cream, diced onions, and fresh cilantro.
Notes
Use rotisserie chicken for a quicker meal and ensure you use freshly shredded cheese for better meltability.
