- 2 cups cooked shredded chicken
- 1 cup queso cheese
- 8 corn tortillas
- 1 can enchilada sauce
- 1/2 cup diced onions
- 1/2 cup chopped cilantro
- 1 teaspoon ground cumin
- Salt to taste
- Olive oil
Instructions
- Preheat oven to 375°F (190°C).
- Combine shredded chicken, queso cheese, diced onions, ground cumin, and salt in a bowl.
- Heat tortillas in a skillet until warm and pliable.
- Fill each tortilla with the chicken mixture and roll them up.
- Spread a layer of enchilada sauce on the bottom of a baking dish.
- Place the rolled enchiladas seam-side down in the dish.
- Pour remaining enchilada sauce over the top and sprinkle with additional queso cheese.
- Bake for 20-25 minutes until cheese is bubbly and golden.
- Garnish with chopped cilantro and serve hot.
Notes
Use leftover rotisserie chicken to save time. Feel free to add more veggies, like bell peppers or spinach, to the filling.
