Description

Cheese Chicken Enchiladas are cheesy, flavorful, and packed with tender chicken, perfect for family dinners or cozy nights in.


Ingredients

  • 2 cups cooked shredded chicken
  • 1 cup queso cheese
  • 8 corn tortillas
  • 1 can enchilada sauce
  • 1/2 cup diced onions
  • 1/2 cup chopped cilantro
  • 1 teaspoon ground cumin
  • Salt to taste
  • Olive oil

Instructions

  1. Preheat oven to 375°F (190°C).
  2. Combine shredded chicken, queso cheese, diced onions, ground cumin, and salt in a bowl.
  3. Heat tortillas in a skillet until warm and pliable.
  4. Fill each tortilla with the chicken mixture and roll them up.
  5. Spread a layer of enchilada sauce on the bottom of a baking dish.
  6. Place the rolled enchiladas seam-side down in the dish.
  7. Pour remaining enchilada sauce over the top and sprinkle with additional queso cheese.
  8. Bake for 20-25 minutes until cheese is bubbly and golden.
  9. Garnish with chopped cilantro and serve hot.

Notes

Use leftover rotisserie chicken to save time. Feel free to add more veggies, like bell peppers or spinach, to the filling.
