Instructions
- Wash and dry the strawberries. Cut off the tops and carefully hollow out the centers using a small knife or a fruit corer.
- Beat the softened cream cheese until smooth, breaking up any lumps.
- Add the powdered sugar and vanilla extract, mixing until well combined.
- Fill each strawberry with the cheesecake mixture using a piping bag or small spoon.
- Dip the tops of the strawberries into the graham cracker crumbs.
- Drizzle with melted chocolate if desired.
- Refrigerate for at least 30 minutes before serving to set the filling.
